BREADER is a luxury shokupan, or white bread, specialty shop born out of the owner’s admiration for
his father and the discovery of the delicious fresh water of Shiga’s Harie district.
Here, two types of delectable shokupan bread, featuring an abundance of Shiga’s rich natural offerings, have been
carefully selected for your eating pleasure. Each loaf is crafted so as to offer a uniquely exquisite taste and appearance.
BREADER’s owner has worked tirelessly to pack all he loves and aspires to, not only into his breads,
but also into the products’ packaging and the design of the store itself.
Just as Lake Biwa (Biwako) is the first thing one thinks of when hearing the name Shiga, so too has BREADER’s signature bread, “BIWAKO,” been designed to immediately come to mind when hearing the name BREADER.
BIWAKO’s most recognizable feature is the line that appears right down its center when cut. Inspired by the water’s surface on Lake Biwa, this subtly moving line was created from cacao using an original in-house method.
The bread’s exterior features a dark pattern of bitter cacao that was designed to conjure images of Lake Biwa’s morning mists, giving the bread a refined and mature allure. Enjoy the aroma of bitter cacao starting at the crust.
In addition to standard baking ingredients, BIWAKO also includes milk and heavy cream, which add a touch of luxury and richness and make BIWAKO the perfect souvenir for that special someone.
Made with the timeless fresh water bubbling from the springs of Harie, STANDARD offers a mellow yet delicious texture unlike any other white bread you’ll encounter.
By adding honey and condensed milk to the batter, BREADER has given STANDARD its characteristic clean sweetness and rich, creamy depth.
